INGREDIENTS
4 Cups of Rice
2 medium size Onions,
Seasoning cubes
4 red small pepper
3 Big pepper (Tatase)
5 Big tomatoes
4 Pieces of Chickens
Salt
Curry
Thyme
70g Tin tomatoes
Vegetable oil
Butter
sweetcorn
METHOD
1. Slice the onions and set it aside. Blend the pepper together and set it aside. Boil the chicken with seasoning cubes, some sliced onions, curry, thyme and salt. Let it boil for like 30 minutes.
2.Place the pot on medium heat and add some oil. Pour the blended pepper, chicken water, seasoning cubes, a little salt, curry, thyme and tin tomatoes. Stir fry for about 5 minutes. Add some water, enough to cook the rice then cover it for like 10 minutes.
3.Wash your rice properly and pour into the pot. Check after 15 minutes to see the level of the water. If it has dried up, add some little water, cover and check every 5 minutes until the water has dried up and the rice is soft. Mix the rice with a wooden spatula as seen above.
4.Add your sliced onions, sweet corn and butter and cover for another 3 minutes. Mix properly with a wooden spatula. Then remove it from the fire.
5.Pour some Vegetable oil in your frying pan and fry the chicken. Then you can serve your jollof rice with your chicken.
