Strawberry Short Cake
Hello
everyone and welcome to another exciting edition of Tozali's Meals by Me™.
My
name is Hapsy Ibrahim-Mahmud and this edition I am going to do a request
recipe...which is The Strawberry Short Cake! Yay! I know, I know alot of you my
lovely citizens have been writing in ever since they saw me post the cake on
Our Saffron FACEBOOK page (which is our catering company). Not to worry guys,
the wait is over.
So.....
Strawberry Short Cake
I am using a classic
Diner recipe that easy, quick and very moist.
You'll need:

1/2 cups cake flour
·
1/2
teaspoon salt
·
3/4
cup Buttermilk
·
abt a teaspoon of lemon zest or essence.
·
3
tablespoons unsalted butter
·
1
tablespoon vanilla extract
·
3
large eggs
·
1
1/4 cups sugar
·
2
pints fresh strawberries
·
Whipped
cream for the frosting
Here's
what you do:
Preheat oven to 350
degrees with a rack in the middle of the oven.
Butter up and flour
2 (9-inch) cake pans. Line the bottoms with a circle of baking parchment.(use
the pan as a guide to help you cut out the circle parchment paper)
Into a large bowl,
sift the flour, baking powder and salt together, 3 times. In a small saucepan,
bring the milk and butter to a boil. Remove from the heat and add the vanilla
and lemon extracts. In separate mixing bowl, beat the eggs and sugar until pale
yellow, and fluffy, and doubled in volume. While still beating, drizzle in the
hot milk mixture. Fold in the flour mixture. Take a quarter of the strawberry
and sprinkle some sugar( draw out the liquid) then add to
cake batter. Fold in gently. Spread the batter in the prepared pans and
bake for 15 minutes, or until golden, the center springs back when lightly
pressed, and a cake tester comes out clean.
Set the pans on a
rack to cool. Run the tip of a knife around the edges of the cakes to loosen
them, and turn them out of the pans. while the cakes are cooling, make the
whipped cream..(just use a store brought one and follow the instructions on the
packet) and dice some of
strawberry and slice the rest into halves.
After their cooled, put some whipped cream and
diced strawberry on the bottom cake. Sandwich it with the one cake and then
frost and decorate the cake with rest of the sliced strawberries as you desire.
I used the back of a spoon ..no fuss people! Dinner cakes are meant to eaten
like...IMMEDIATELY!!!
So just have fun

Hot tip: when you're working
with whipped cream, be fast! It doesn't like heat!
